I have noticed that listed in the ingredients on many vegetable extracts spreads (eg: vegemite, promite, pelican feet, etc) is citric acid under the heading of an acidity regulator.

Why is this the case?

Hope someone can help?

Citric acid is often added along with sodium citrate to many spreads in order to control the acidity of the spreads.

The two work as a buffer to control (or regulate) the acidity of the spread.
